Xoriatiki Salata

Xoriatiki Salata

1 small head of lettuce, torn in pieces                         ½ small red onion, sliced thin

3 tomatoes, cut in wedges                                          115-170 g (4-6 oz) feta cheese

1 cucumber, peeled and sliced thin                            ½ C Kalamata olives, pitted, halved

Dressing:

¾ C olive oil                                                                2 cloves garlic, minced

¼ C lemon juice or red wine vinegar                          ½ t salt

1 t oregano (Greek if possible)                                    Pepper

Mix tomatoes, cucumber, onion, and lettuce in a salad bowl. Top with olives and Feta cheese. Combine the dressing ingredients; pour over salad and toss.

I had one hell of a time coming up with a recipe for ‘X’! After much searching, swearing and copious amounts of coffee, I finally came up with this one. What do you think of it? This traditional Greek salad is the perfect accompaniment for rustic dishes such as leg of lamb. I’m told it translates to “Greek Village Salad”.

This A to Z Blogging Challenge has been an amazing adventure so far. I’ve been informed, astonished, amused, and entertained. In two days time, it will be finished. I’m already beginning to feel a sense of melancholy and loss. On the positive side, I’ve discovered so many interesting blogs to follow and I’ve gained a few followers for my own blog. I’m so grateful to have discovered this challenge because I have met the cream of the crop and there’s no doubt that my own writing and blogging will be improved by their examples.
