Grilled Steaks with a Martini Twist

4 boneless top loin steaks 2.5 cm (1”) thick,               1 t lemon peel, shredded fine

795-900 G (1.75-2 lb total)                                         1 t tri-color peppercorns, crushed

¼ C green onions, chopped fine                                 2 T green olives, sliced

¼ C Gin                                                                      Lemon peel strips

1 T olive oil

Trim the fat from the steaks and place them in a plastic bag set in a shallow dish. For the marinade, in a small bowl stir together the green onions, gin, olive oil, and lemon peel. Pour over steaks and seal the bag. Marinate in the refrigerator for 30 minutes, turning bag once. Drain the steaks and discard the marinade. Press the crushed peppercorns onto both sides of the steaks.

Preheat the gas grill. Reduce the heat to medium. Place the steaks on the grill rack directly over heat. Cover and grill to the desired doneness, turning once halfway through grilling. (Allow 14-18 minutes for medium rare and 18-22 minutes for medium.) Season to taste with salt. Garnish the steaks with sliced onions and lemon peel strips.

To cook on a charcoal grill, prepare the steaks as described and grill directly over medium coals allowing 14-18 minutes for medium rare and 18-22 minutes for medium. Turn once, halfway through grilling.

These steaks come out tender, juicy and packed with flavor. Slip them onto plates with a side salad and a baked potato and you’ll swear you’re in heaven! Don’t you hear the grill calling you? What are you waiting for? Leave a comment with me to tell me what you think of them.
