Few things make me more nostalgic than bread pudding. My “Nanny” used to make it often. One thing I remember is that she cooked it in the upper section of a double boiler. So, I reckon those old pots can be used for more than delicate cooking! I’ve had many a bread pudding over the years since she passed away, but none has come close to hers. Must have been that generous dollop of love she added.
Old Fashioned Bread Pudding
Pudding
2 eggs, beaten 4 C homemade biscuits, crumbled
2 ½ C sugar Sugar, brown or white for sprinkling
Sauce
1 C sugar 2 T cornstarch
1 C water
Combine all ingredients except the butter in a large bowl and pour into a baking dish. Cut butter in thin slices over the top and sprinkle with a little sugar. Bake at 175°C (350°F) for about 35 minutes.
For the sauce, combine the sugar, cornstarch and water in a saucepan and cook over medium heat until it thickens. Remove from heat and add vanilla and butter.
Spoon sauce over the pudding and serve warm. It’s also good cold!
