A to Z Challenge Continues with “L is for Lemon Crumb Pie”

Deceptively simple, this mouthwateringly delightful dessert will please you and your family and have them crying out for more! Why not make two?

Lemon Crumb Pie

1-170 g (6 oz) pkg lemon Jell-o                                  1/3 C lemon juice

1 ½ C sugar                                                                 3 2/3 (2 cans) evaporated milk, chilled

¼ t salt                                                                        2/3 C  melted butter

2 C boiling water                                                        4 C vanilla wafer or graham cracker 1 ½ t grated lemon rind                                                    crumbs

Dissolve the Jell-o, sugar and salt in the boiling water. To this mixture, add the lemon juice and rind. Chill until very thick.

Add the evaporated milk and whip until very fluffy. Meanwhile, mix the butter and crumbs. Reserve 1/3 C of the crumbs. Press the remainder firmly into a 33 x 22 cm (9 x 13 inch) dish. Spoon the gelatin mixture into the dish and sprinkle with the reserved crumbs. Chill until firm.

  2. Mmmmm …. pie! That’s one thing I miss about life back in the states. Don’t get me wrong … I like Arabic sweets too. But there is something about a nice slice of pie. Pure Americana at its best.
